Hello and Welcome! I'm Josefina, the owner of Gluten Tag.
Originally from Argentina, I made the city of Copenhagen my new home in 2020. My passion for cooking, especially baking, has been a lifelong journey. As a teenager, my mom was my baking partner, sharing her recipes and knowledge with me—many of which I still use today. As I grew up, I was always the go-to person for baking birthday cakes, anniversary treats, and creating sweet tables for any friend's celebration.
In October 2021, my life took an unexpected turn when I was diagnosed with a gluten allergy. This diagnosis transformed my entire approach to baking. At that time, I knew nothing about gluten-free food, so I had to start from scratch, re-learning everything.
I immersed myself in baking courses, bought many books, attended master classes and tested gluten-free foods everywhere I travel. From supermarkets to bakeries, I explored every brand I could find. My goal was to transform common recipes into delicious gluten-free versions. It was a challenging journey, filled with both failures and successes, but each attempt made me better and sparked a new dream.
